    For me, this zero-additive ‘label rouge’ French flour is the best for slow fermentation French style breads such as baguettes, croissants, brioche or pain au levain. This flour always delivers great taste, lovely soft texture and a beautiful crust and is especially good with high hydration recipes.

    As it says on the label, this flour is perfect to prepare “bagette de tradition “, which requires an approved flour (high qualityT65) and a specific making process.
    I use this long fermentation campaillette to make either baguette, or sourdough bread which i would personnaly mix with whole grain flour (between T85 and T110) to bring a more rustic taste.
    I even use it to make ravioli, and it’s perfect !
    I’ve bought it a few times, and will again.

    I make all the family bread — sourdough with a touch of commercial yeast — and for many years Campaillette has formed the bulk of the flour in my dough (plus 3% whole rye, 5% light whole wheat, and 9% very strong “Manitoba” flour). I use Campaillette for the way it handles slow fermentation but also, in fact primarily, for its flavour. Delivers a lovely warm-cream colour to the bread as well.
