Congratulations Emily, you are our star Baker of the Week!

We absolutely love your baking and you take such beautiful, vibrant photographs! How and when did your love for baking begin?

Ah thank you, this means the world to me. I actually just asked my Mum when I started baking, as I’ve been in the kitchen for as long as I can remember and she replied with ‘you’ve been baking since you could sit up properly and talk – your favourite thing to bake back then was Welsh Cakes’

What’s your favourite thing to bake?

I just adore baking for other people – whether it’s a 3 tier birthday cake for a family member or a loaf of bread for the neighbours. Currently, I’m enjoying adding twists to classic bakes such as infusing traditional Baklava with chocolate and orange flavours.

Where do you get your inspiration from?

Absolutely everywhere! From the fantastic foodie community online and recipe books to seasonal produce and new menus from my favourite independent eateries, there is inspiration for me everywhere.

Do you have a preferred flour to bake with?

I mean, if there was one I couldn’t live without, it would be plain flour. Although the Matthews Cotswold Flour range is second to none – the Cotswold Crunch adds a great texture and flavour to any bake.

Is there anything you haven’t baked yet that you want to try?

Most definitely, the list is endless and I’m constantly adding more things I want to try. Croissants is definitely something I want to at least attempt one day – and then any other formation of a croissant like cronuts, cruffins etc!

Do you prefer baking sweet or savoury dishes?

I think savoury, and that’s probably because there is more room for error haha! Anything baked with pesto or cheese, sign me up!

What advice would you give to someone who is just starting baking?

Don’t give up! I think the amount of my baking failures outweigh the successes but it’s all a learning experience and only makes you better. I used to get so disheartened if something didn’t rise or turn out how it should but there’s no better feeling once you’ve nailed it!
