A white, bakers grade, strong flour, suitable for bread and rolls. A good, all-round flour for a range of products.

Available in 16 kg sacks or 1.5 kg bags.

A strong white flour ensures the bread will rise, as the protein, gluten, absorbs the water in the dough and becomes stretchy, trapping the carbon dioxide created by the fermenting yeast. As FWP Matthews strong white flour has a higher protein percentage than regular flour, it is known as a strong flour, giving more reliable results when making bread and bread rolls.

As the gluten sets, whilst baking, the stretched fibres give body to the bread and it’s spongy texture. When using flour of a lower protein percentage, the bread can be heavier and dense as a result. Therefore using high 13% protein strong flour is recommended.

    This really is the best bread flour. My daughter recently did a course and the master baker recommended it. I bake by hand and have used three other sorts, all with great success. I have never had a failure and every piece is eaten, it also stays very fresh.

    This is my second order of the flour and have been really pleased with it delivery is really quick as well. I make one or two batches of bread per week and love the results the bread is moist and light. I also love the Cotswold Crunch is it possible to be able to order a five bag mix of the various flours that you do say a mix of the Wholemeal, Cotswold crunch etc as I do not use these as quickly as I do the white?

    I have used this flour for years now – I used to buy it in sacks just for home!.it gives me the most consistent bread of all the flours I have tried. I Recommend it to every one I talk to about bread.

    I like all their flours and am pleased to see more in the 1.5kg packs. It would be nice to see more of the French ones in those packs too.

    These really are the best flours out there, and I have tried them all.

    I’ve been using the strong white for all the various loafs I bake for the family and it is without doubt the best on the market. I knock up several sour dough loaves per week and all are of consistent quality and great flavour.
    Like Janet, I’d be interested in a mixed batch of 5 bags from time to time as the T55 and Cotswold crunch is amazing but I don’t use as much of it.

    Have tried many different flours, and this is the best I’ve found.

    I mix the strong white 50/50 with the organic cotswold crunch, prepare the dough in a bread machine and then rise and bake in the oven. Makes a lovely loaf, good texture and taste every time.

    Hi Arthur, what a great idea – in the office we are always blending different flours together! Have you tried our Eight Grain? It is full of seeds and grains which makes for a healthy (and yummy!) load of bread!
