    This flour makes the most excellent soft bread with a crispy crust – best i’ve ever made – I don’t use any other flour now that i have found this!

    I made a couple of boules, 75 hydration,not at all easy to handle ,but both turned out well,,maybe next time 70, good flavour ,crumb and crust

    First time I’ve used this flour and was very impressed. I followed the recipe on the pack and was surprised at only using 4 ingredients, flour, water, yeast and salt. if you put a tray of hot water in the oven to create steam, you get the crispiest crust.
    Exactly like traditional French baguettes.
    Will definitely be buying more, especially as Aldi have it in stock, along with quite a few other varieties.

    I found Matthews flour in Aldi. I made the best bread I have ever baked. Sadly Aldi doesn’t seem to have any more. Think I may have to order online.

    Great flour for making bread. I had previously used an economy T55 flour with mixed results, Matthews T55, though produces a consistent and flavoursome product.

    A brilliant flour that gives consistent excellent results. Crispy crust and an excellent centre of light bread. Our household’s favourite bread is made with this flour in our bread maker. Have experimented with this flour, and when added to a strong flour, malt extract and omega seeds it produces a very healthy loaf. Second experiment was adding it to a strong bread flour and malt extract and it produces a delicious malty bread with a crispy crust ideal for a lunch of warm bread and soft French cheese. Could not get it at one of our supermarkets or Amazon, so I ordered it direct from Matthews. It arrived within twelve hours. Fantastic service.

    I tried several flours to make a baguette and never really succeeded until tried this one . Still have not got the right oven for it, but with a little extra steam it makes really good baguettes, chewy in the centre, crisp on the outside. My only beef is that more retailers should stock Matthews T55 flour. Amazon are out of stock .

    Bought this from Aldi without high expectations as I have been disappointed by other ‘french’ flours. However it produced the best baguettes I have ever baked (by some margin) I understand that Aldi will no longer stock this what a shame – nearest stockist is in Oxfordshire and postage doubles the price.

    I have made my own bread for years and downloaded french bread recipes which just tasted the same as any bread – why – none of them said you need a special flour – I goggled and googled and by accident I found this one – a miracle – the smell and taste is exactly what I have been searching for years – a knockout with my family and friends

    I was buying French T55 from Aldi and it has made the best bread ever from myold Panasonic bread maker and I have been using that bread maker for over 20 years!

    Sadly Aldi dont seem to sell it anymore so I will have to order on line, I only want small quantities ,I hope that won’t be a problem

    I bought this flour for baguettes – for which it is excellent. But I then made ordinary loaves with it: they were light with a good crust and toasted well. Upshot: this is the only flour I use for white bread now! So I buy the 16kg sacks rather than the small 1.5kg bags.

    Makes wonderful white loaves – much better than ‘ordinary’ bread flour as it has that typical almost nutty French taste… gives a good crust with a moist and soft inside.

    Best T55 flour available in U.K. Makes “proper” baguettes – oh so good with butter and jam or as a BLT. Well worth the time expounded and The rest of the family can’t wait for me to make another batch.

    I bought this flour from Aldi, to try it out.
    It had made the most wonderful breads, that I needed more flour, so I ordered it direct from the mill.

    have used this flour and noticed a distinct [odd?] taste, the flour itself has this smell in the packet but looks like any other flour ive bought, is this normal for this flour, i’ve not found it in other flours?

    As a regular user of this flour, since March last year, I’ve never had an odd taste
    Are you using fresh or dried yeast?
    As an Aldi customer I stock up whenever they have this flour as a special as it has a good shelf life.
