Chocolate Chip Cookies


  • 80g Soft light brown sugar
  • 100g caster sugar
  • 120g Soft Salted butter
  • 1 whole egg
  • 170g Cotswold plain flour
  • 1 tsp Baking powder 
  • 150g Chocolate chips



  1. Mix your butter and sugars until just combined 
  2. Add the whole egg. 
  3. Mix in the flour and baking powder slowly
  4. Lastly add the chocolate chips. 
  5. Let the dough rest in the fridge for at least 1 hour
  6. Roll your cookies into balls ( I normally use an ice cream scoop) 
  7. Bake the cookies at 170 degrees for 8-12 minutes, they will still be soft when they come out of the oven, just let them cool down slightly and they will firm up. 

I normally sprinkle a little bit of sea salt on top of my cookies before I bake them.
